For gardeners, rainy days provide a welcome break from weeding. It has been raining all day here, with the temperature only reaching 65 degrees, a good day to bake something for that afternoon cup of coffee. On days like this, I often feel an urge to bake, so why not have a cookie break? This recipe is the easiest cookie I've ever made, and I've taught all our kids how to make them because they are so simple and the ingredients are always in the pantry. You can never have enough cookie recipes, especially peanut butter! Enjoy!
The Best Peanut Butter Cookies
1 c. peanut butter
1 c. sugar
1 lg. egg
1 tsp. vanilla
Mix all ingredients well and form into balls, place on a greased baking sheet, and flatten with a fork. Sprinkle a little sugar on top and bake at 325 for about 13 min.
