Waste not, want not was the saying I grew up with and I guess it’s stuck, I hate waste! Here in the Ozarks, the trees are starting to bud out, fields of white flowering trees mark the beginning of allergy season. I’m pretty healthy for the most part but something about springtime that sets off the scratchy throat, stuffy head and keeping a tissue handy at all times is a must. Not this year!
We take broth for granted, it so easy to grab a can or box of the store bought broth, yet it’s so easy to make. You’ve probably had all the ingredients many times while cooking but tossed the scraps. Not anymore!
This simple vegetable broth ( you can add herbs for more flavor ) has been used in traditional kitchens for generations to support the lungs, loosen mucus, and strengthen the immune system—especially during colds and times of seasonal stress. This warming broth works with the body by supporting its natural clearing and recovery processes. Each ingredient helps in its own way. Keep jar handy, the tissues too!
ONION

INGREDIENTS: (Organic Preferred)
1 onion, roughly chopped
2 celery stalks, roughly chopped
2–3 garlic cloves, roughly chopped
1 liter water
½ tsp raw honey (optional, added after cooking)
DIRECTIONS:
Add onion, celery, garlic, and water to a large pot
Bring to a gentle boil
Reduce heat and simmer on low for 30 minutes
Remove from heat and strain
Allow to cool slightly before adding honey (heat can damage enzymes)
Sip warm. Drink 1-2 cups daily as needed.
